My wife actually used to use the Rotato. I'm not sure if they make it anymore but it's this basic idea but standing instead of side ways. You could peel potatoes and apples very quickly. I used to make fun of her but now that she does it by hand, I'd like to consider finding another for her...or mabye even this one.
I love puns, so when you mentioned Rotato it actually made me chuckle a little bit. I liked the name enough to look it up and sure enough, the Rotato still exists. That's awesome!

This is pretty much the same thing as Destinee suggested except for this one attaches to your counter top via suction. I prefer this method because I think it's easier to position it, but it does the same exact thing.

This one looks ridiculous, I know, but it works really well! I promise! It looks cheap and resembles a kid's toy, but I assure you, it's a quality peeler. I can effortlessly remove my apple peels in no time because of the design...the sideways blade covers way more surface area than your normal peeler, so it literally takes a fraction of the time as a traditional peeler.
Doesn't look like much, but this thing really gets the job done. If you don't mind its silly looks you will be pleasantly surprised by its peeling ability!

I would say go with your basic, time tested peeler design.These are pretty cool... it will attach directly to your counter. I've used them before and they work really well, and are also very simple to use. The only thing with this design is you have to make sure you are secured tightly to the counter or it will jostle itself off.
