As far as quick set up goes, this is going to be your best bet. Yes, it has poles, but it's tough to find a high quality tent like this that doesn't use poles. I can set it up in under 3 minutes I would say.
It's designed for two people, but it's as light as a lot of one person tents I have owned in the past.

North Face is a great company to consider for just about any outdoor needs that you may have. I don't have this tent but I do have a heavy winter jacket of theirs and it's phenomenally warm and well made. I would have no hesitation about recommending this tent, even though I have never used because they have such a great reputation.

I think this would be the right tent for you!!!!! It is spring loaded!!!!
It literally pops up! All you have to do is smash some stakes into the ground to hold it in place. Perfect for one or two people.
The only problem I see is that it's not really for backpacking or anything like that.... it doesn't fold up small enough for backpacking, it's like a disk shape.
This is as quick-pitching as a tent will get though.
My boyfriend is way into camping and backpacking and stuff. He's totally an outdoorsman type guy. Anyways, he's been asking me to buy him one of these for Christmas this year, and I don't know if I will because they're pretty expensive, but they are supposed to be fantastic tents! YOu should look into it.

Alright man I know you said no poles, but this tent could not be easier to set up... it only involves 3 poles, and after you set it up once you will be able to do it in minutes flat..... like 2 or 3 minutes.
It doesn't have those awful tubes of fabric that you have to slide the poles through. You can see by the picture that it's more like a little loop that you slide the pole through. Very easy indeed.
It is very lightweight, and though I've never taken it backpacking I know that I could, considering how light it is.
It has a rain cover, too, although I wouldn't say it blocks sun very well. The whole thing is orange, so direct sunlight tends to light it up a bit... but isn't that part of the joy of camping? Waking up painfully early?
Another nice feature you get with a slightly more expensive tent like this is the stakes are made of a sturdy aluminum, not cheap plastic like some other cheapies I've owned.
All in all it's very sturdy... nice design makes the most out of the 3 poles.
Also has a 'vestibule'.
I definitely recommend this tent. I have gotten a lot of good use out of it and I'm sure you will too!
